Manzanilla gets its bright, crisp ever so slightly salty characteristics
from its seaside hometown. Produced in the same manner as Fino, Manzanilla
has its own Denomination of Origin inside the Sherry triangle and can only
come from Salúcar de Barrameda.
Serve chilled with Spanish olives, Marcona almonds and other nuts, oysters,
pan fried scallops with wilted spinach and butter sauce, cured Iberian ham,
shrimp with smoked peppers, or an onion tart with Spanish anchovies.
